Blackberry Oat Bars

How many times now have I said that weekends are for baking? Many, many times! These Blackberry Oat Bars are little bites of oatmeal base with fresh blackberries peppered in for a little bit of tart among the sweetness of the bar. And I’ve got to say too, these are super easy to make.

The oatmeal base for these bars is made all in own bowl, and the blackberries are sandwiched in the middle to bake into perfect little bars that you can enjoy for breakfast, brunch, or even as a snack!

I was able to lighten these bars up by using a brown sugar sweetener blend and also leaving out the pecans. I thought the crunchy oat bits on top of the bars was plenty enough crunch for me. But, if you like a more dense and nutty bar, feel free to use the chopped pecans!

I served mine with a side of fresh berries and had a great little breakfast that could have been just as easy as a meal on the go.

Delicious little breakfast bites made with oats and fresh blueberries. Perfect for a grab-and-go snack or meal!

Ingredients

  • 2 C. Fresh Blackberries
  • 1 Tbsp. Sugar
  • 1 Tbsp. Corn Starch
  • 1 1/2 C. Flour
  • 1 1/2 C. Oats
  • 1 C. Brown Sugar/Stevia Blend
  • 1/2 Tsp. Baking Soda
  • 1/4 Tsp. Salt
  • 1/3 C. Chopped Pecans (Optional)
  • 1 C. Butter, Room Temperature

Instructions

  1. Preheat the oven to 350 degrees F. and line a 9x9" baking dish with foil or parchment paper; lightly coat with non-stuck baking spray and set aside.
  2. In a small bowl, toss the 2 C. blackberries,  1 Tbsp. sugar, and 1 Tbsp. corn starch together; set aside as well.
  3. In a large bowl or the base of a stand mixer, combine the 1 1/2 C. flour, 1 1/2 C. oats, 1 C. brown sugar blend, 1/2 Tsp. baking soda, 1/4 Tsp. salt, and optional 1/3 C. pecans.
  4. Add the 1 C. butter and mix on a low speed until the mixture is 'coarse crumbs'.
  5. Spoon half of the oat mixture into the prepared baking dish and press into the bottom of the pan to form an even layer.
  6. Top with the blackberries.
  7. Sprinkle the remaining half of the oat mixture over the black berries. DO NOT PRESS DOWN on the top layer.
  8. Bake for about 30 minutes or until golden brown.
  9. Cool completely before cutting to enjoy!
